If you inspect a package of M&M's, among the most popular candies in the US, you'll see familiar components like sugar, skimmed milk powder, and chocolate fat. However, numerous elements are less known: acacia gum, dextrin, palm wax, soya lecithin, and curcumin.
There are thirty-four ingredients in M&Ms, with at least 30 nations participating in providing them. Each has its distinct supply chain that converts raw materials into ingredients – beans into chocolate paste, plants into sweetener, petroleum into blue food dye.
These components then journey globally to a main manufacturing plant where they are mixed and converted into small blue, red, yellow and green candy-coated chocolates.
It's becoming better understood that food systems are a major driver of the environmental emergency. Scientists can study deforestation for agriculture or greenhouse gases from animals. But the environmental impact of ultra-processed foods – like M&Ms – is less clear and is just beginning to come into focus. One reason they have been so difficult to evaluate is the very nature of ultra-processed foods: these industrially made foods include a vast array of ingredients and processes to assemble them, making it extremely difficult to monitor.
But it doesn't mean it's unimportant. Since UPFs take over American supermarkets and diets – they now account for 70% of products purchased in grocery stores, and over 50% of dietary energy intake – experts say that understanding their environmental toll is critical to create a more climate-friendly agricultural system.
While scientists are only starting to examine the environmental impact of UPFs, existing knowledge about them is worrisome.
"The more processed products become, the more deleterious they are to public wellness and the environment," stated a senior researcher. The main reason, he clarifies, is that the components are so energy intensive. When combined, the impact balloons.
Consider M&Ms. The first step in producing the candies is cultivating for cocoa, sweetener, dairy and palm.
There is extensive evidence that farming for ingredients like chocolate drives consistently rising rates of forest clearance across the globe. Since 1850, agricultural expansion has driven almost 90% of worldwide forest loss, which has been responsible for thirty percent of global greenhouse gas emissions. Large corporations have been criticized in the past for agricultural methods in their production network, and have since developed sustainability plans, but these do not resolve that industrial farming are, at their core, ecologically damaging.

Furthermore are the industrially made ingredients like artificial colors – perhaps the signature of intensive manufacturing – which these candies contain 13 different types of. The blue candies are colored with E132 and E133; these dyes are mostly made in industrial color production centers Asia, through synthetic processes of petroleum derivatives with diazonium salt, accelerated by the metals copper or chromium.
Creating soy lecithin, an additive made from plant oil that's used to alter the texture of chocolate, requires steps like oil refining in a hot reactor, chemically isolating fat molecules, decolorization using chemical agents and dehydrating under reduced air pressure. Similarly, a sweetener, begins as corn that gets soaked in chemicals before being ground, divided and dried. Afterward, it's decomposed into simpler compounds using biological catalysts and chemicals, and then recrystallized.
Although ultra-processed chocolate products are among the most damaging, other kinds of UPFs are taxing on the environment as well. Take for instance another popular snack, which has 39 components. Maize is the primary component, and for every acre grown, one thousand kilograms of CO2 is released to the atmosphere. Like major brands, manufacturers have developed their own sustainability promises, but many of these commitments are underpinned by practices that are considered greenwashing.
As a result, researchers have begun estimating the environmental toll of ultra-processed foods.
A study estimated that well-known sweets generate at least thirteen point two kilograms of carbon equivalents per kilogram produced. With yearly output of over 664 million kg in the United States, this would mean that the candies emit at least 3.8 million tons of CO2 – making up 0.1% of yearly carbon output in the US. But, this is only an estimate based on accessible information; the true cost is likely much higher, according to specialists.
There's a "unknown element" when it comes to emissions tracking in the manufactured food sector, notes a professor who researches how corporations respond to the environmental challenge. "There exists so much uncertainty as supply chains get complex."
Getting an exact measure of the environmental toll of ultra-processed foods is extremely challenging, since, by definition, these products consist of numerous components and a high volume of opaque processes. Components aren't just mixed together like one would do to make a stew at home. Rather, these ingredients are altered synthetically, certain portions stripped away, and flavors, dyes or textures added in – and it's unknown what the cost of these processes are because numerous providers and components are included.
A further factor is that all UPFs are the products of manufacturing corporations that have minimal motivation to reveal their environmental footprint and might not fully understand it to begin with.
As an example, major brands do not farm key ingredients themselves, but instead rely on numerous growers that may not have precise emissions tracking in place. This means that emissions from large manufacturers may be underestimated. Analysts noted that corporations "lack actual data, so they use emissions factors, which are guesses."
Researchers say that corporations submit data on straightforward aspects like transportation, which are simpler to measure, and often omit or complicate the farming-related carbon of their items. Ultimately, disclosing significant carbon output goes against the interests of major manufacturers, so the intricate assessments needed to determine the carbon footprint of large-scale agriculture and multi-step industrial chemical processes used to make processed food components remain understudied.
"The main point of manufactured products is profit," stated the researcher, pointing out that they're designed to be attractive, convenient and pleasurable to eat.
"Most of the people in the manufacturing sector's value chain are not concerned with global warming from an ethical perspective, but they do care about profit," said another expert. He clarifies that to shift those incentives, the value of products and components would need to incorporate their impact on our global environment. But that would require official policies and economic consequences based on the actual ecological impact of UPFs.
At just under $2, the cost of M&Ms at the grocery store hardly reflects their true cost on the environment. But to tackle these issues with ultra-processed foods, more than just a minor adjustments to the component selection are required.
"Lowering the sodium, or sweetener of just a single item is just greenwashing," said Fardet. "We need to change the whole picture." To do that, he recommended consuming more locally sourced, whole foods, which often take far fewer resources and transportation to create, and therefore have a significantly reduced environmental impact.
